I think it would be cool to be able to pick some minor customization (gender, main color — race? Elven sorcerers, human wizards…)
Editing keeper.png is easy enough, though; I gave my guy a shave and a hat. 😀 It'd be neat to make that an officialish feature — editing your guy works for Minecraft, after all.
